This is one of our top-tier Heritage Series wines, and it represents the most extensive barrel-aged wine in our cellar. Merlot is always fruit-forward and lush. The extensive barrel aging adds to the complexity of this with flavors of molasses, current, roasted blueberry and blackberry. The finish is taken over by the 23% Cabernet Sauvignon in the blend with impressive leather, tobacco, and soft pepper components. M does well on its own on a cold day and pairs very well with rich and robust food, melding with a hearty gravy on your favorite meat. Wine Making Notes: Natural fermentation start, supplemented within the first three brix of fermentation with an ancient isolated strain of yeast from Bordeaux. Open top fermented. Fermentation is finished in barrels. Sur lees 11 months. The evaporation volume loss was 46%. Unfiltered and unfined. 0% residual sugar. Ingredients: grapes, yeast, bacteria, sulfur.
